Ingredients:

1 1/2 pound new red potatoes. Scrubbed and halved
2 cups fresh spinach leaves, chopped
1/2 cup chopped scallions
3 tbs lemon juice
1/2 cup plain nonfat yogurt
1/4 tsp black pepper

Directions:

Drop potatoes in boiling water and cook over medium heat for 20 minutes or until tender. Drain and allow potatoes to cool.
Toss cooled potatoes with spinach leaves and scallions.

2 tsp Dijon Mustard
1/2 tsp black pepper
8 cups torn fresh spinach leaves
1 cup sliced strawberries
1/2 cup chopped red onions

Directions:

Combine balsamic vinegar, rice vinegar, honey, mustard, and black pepper.
Toss spinach, strawberries and red onions with dressing.

1 ripe cantaloupe or honeydew melon
2 peaches or nectarine, peeled and sliced
2 tbs lemon juice
2 cups blueberries
1 1/2 cups frozen raspberries
1 1/2 tbs honey

Directions:

Cut the melon into 6 slices and place on individual plates or in bowls.
Toss peaches or nectarine with 1 tsp of the lemon juice. Then toss with blueberries.

1/2 tsp Dijon mustard
1 clove garlic, minced
1 tsp dill leaves
2 tbs lemon juice
1 cup diced cucumber

Directions:

Combine potatoes, scallions, radishes and celery in a large bowl.
Combine yogurt, mustard, garlic, dill, and lemon juice. Chill for 1 hour.
Garnish with diced cucumber and serve.
