Gotta love harvest season! This lowfat soup replaces cream with tofu.
Ingredients:

8 cups water or vegetable stock
6 cups butternut squash, peeled and cubed
1 large white onion, sliced in moons
1 leek thinly sliced
1 tablespoon peeled and minced fresh ginger
2 cloves garlic, chopped
1 tablespoon curry powder
1 tablespoon fresh thyme leaves
2 bay leaves
1 pkg firm tofu, cubed

A yummy tofu based dip for breads and vegetables.
Ingredients:

1 pkg LiteĀ firmĀ Tofu
1/2 cup sesame tahini
2 tablespoons light soy sauce
2 tablespoons white miso
1/4 cup fresh lemon juice
1 teaspoon Dijon mustard
2 tablespoons drained capers
1 stalk celery, chopped fine
1 cup finely chopped red or green bell pepper
1 shallot, peeled adn chopped
1/4 teaspoon salt
1/8 teaspoon black pepper

This is one of my favourite salads. I leave the bacon out but left the bacon as part of the ingredients for those who like bacon.
Ingredients:

1 pound spinach
1/2 cup sugar
1/4 cup oil
1/4 teaspoon paprika
1/4 cup apple cider vinegar
1/2 teaspoon salt
6 slices bacon, cooked and crumbled
1 can mandarin oranges
1 cup slivered almonds
1 tablespoons grated onion

This is my family’s favourite dressing of the moment!
Ingredients:

Half of a red pepper chopped
1/4 cup canola oil
1/8 cup vinegar (white or apple cider)
2 tablespoon sugar
1/4 teaspoon Italian seasoning
dash of salt, pepper and garlic powder

Directions:

Add all ingredients to a blender or mini chopper and blend together
Toss dressing into a head of shredded romaine lettuce and top [...]
