Banana Bread 2

Ingredients:
- 1 1/2 cups flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp ground cinnamon
- 1/8 tsp salt
- 1 egg
- 1 cup mashed bananas (3 medium ripe)
- 3/4 cup sugar
- 1/4 cup cooking oil
- 1 tsp finely shredded lemon peel (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Directions:
- Grease 8 x 4 x 2 inch loaf pan.
- In a medium sized mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Make a well in the center of dry mixture, set aside.
- In another bowl, combine the egg, bananas, sugar, cooking oil and lemon peel.
- Add egg mixture all once to the well in dry mixture. Stir till just moistened. Batter should be lumpy. Fold in nuts.
- Spoon batter into the pan.
- Bake at 350 degrees for 50-55 minutes.
- Remove and cool on wire rack for 10 minutes.
