Black Beans And Salsa Noodle Soup
Ingredients:
- 3 14.5 ounce cans of vegetable broth
- 1 16 ounce jar salsa
- 1 15 ounce can black beans
- 1 11 ounce can whole kernal corn, drained
- 1 5 ounce package Japanese curly noodles or uncooked spaghetti
- 1/3 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon pepper
- 2 tablespoons shredded parmesan cheese
Directions:
- Heat broth to boiling in 4 quart dutch oven. Stir in remaining ingredients except cheese; reduce heat to medium.
- Cook 5-6 minutes, stirring occasionally, until noodles are tender. Sprinkle with cheese.
