Breakfast Rice Dish
This rice dish is so easy to put together and it makes a fun breakfast. Perfect for when you have leftover rice from dinner the night before!
Ingredients:
- 2 cups cooked rice
- 4 eggs
- 1/4 cup salsa
- Cheddar cheese to sprinkle on top.
Directions:
- Fry eggs. They can be sunny side up or well done – however you like them!
- Place eggs over rice.
- Add Salsa.
- Sprinkle with cheese.
Makes 2 servings.
