Easy Dinner Rolls

These rolls are so easy and delicious too!

Ingredients:

2 1/4 cups flour
1 tablespoon yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
2 tablespoons butter

Directions:

Combine 3/4 cup flour, yeast, sugar and salt in a large mixing bowl.
In a saucepan heat milk, water and butter until very warm, about 130 F.
Add milk mixture to flour mixture and beat for 2 minutes at medium speed with an electric mixer. Scrape the sides of the bowl to ensure mixture is evenly mixed.
Stir in the remaining flour until a soft ball of dough is formed.
Knead the dough on a lightly floured surface until the dough is smooth and elastic, about 10 minutes.
Cover the dough and let rest for 10 minutes.
Divide dough into 12 equal pieces and form into balls.
Place on a greased pan. Cover and let rise in a warm draft free place until dough is doubled in size. About 30 minutes. (A good place to allow dough to rise in a drafty home is in the oven with temperature preheated to ‘warm’ then turned off before you place the dough inside)
Bake in 375 degree F oven for 20 minutes or until bread is golden brown.

Whole Wheat Oat Bread

Ingredients:

2 cups warm water
1 tablespoon salt
1 tablespoon or 1 pkg dry yeast
5 tablespoons butter
1/2 cup sugar
1 – 1/4 cups oatmeal
1-3 cups white flour
3 cups Whole wheat flour

One of my favourite breads to bake!

Mix warm water, salt, yeast, butter, sugar, 1 cup oat meal, 1 cup white flour and 3 cups whole wheat flour well.
On floured surface, knead for 10 – 15 minutes, add extra flour as needed.
Place in two greased loaf pans (or cookie sheet for rolls).
Cover and let rise until double (about 30 min). Sprinkle oats on top of loaf if desired.
Bake at 350 degrees for 30 min (18-25 min for rolls).

Whole Wheat Cheesy Pretzel Recipe

Ingredients:

l 1/2 cups whole wheat flour
1 tablespoon yeast.
1/2 teaspoon salt
1 tablespoon sugar
2 tablespoons margarine
1/2 cup shredded Cheddar cheese
2/3 cup warm milk
1 teaspoon basil
1 teaspoon garlic powder
1 egg, beaten
l 1/2 teaspoons coarse salt

Directions:

Combine first flour, yeast, salt and sugar in a medium bowl.
Cut in margarine with a pastry blender or two knives until mixture resembles coarse meal (like biscuits).
Add cheese, warm milk, basil and garlic powder stirring until dry ingredients are just moistened. Cover and allow to sit for about 10 minutes.
Turn dough out onto a lightly floured surface and knead about 12 times.
Divide dough in half and with a rolling pin roll each half into a rectangle. Cut dough lengthwise into eight 1-inch strips. Twist each into a pretzel shape.
brush with beaten egg and sprinkle with coarse salt.
Place on lightly greased baking sheets.
Bake at 400° for 15 minutes or until golden brown. Cool and serve warm.

Makes about 16 servings.

Eggs Benedict With Hollandaise Sauce Recipe

Eggs Benedict Ingredients:

2 English muffins
4 thick slices ham about the size of the English Muffin.
4 poached eggs
1/2 Cup Hollandaise Sauce

Directions:

Split, toast and butter English muffins.
Cook meat and place a slice on top of muffin half.
Place one poached egg on each muffin half.
Pour 1/8 cup of Hollandaise sauce over each egg.

Easy Hollandaise Sauce ingredients:

3 large egg yolks
1 1/2 tablespoons cold water
1/2 cup warm butter
2 teaspoons lemon juice
3 tablespoons minced onion
Salt and pepper to taste

Directions:

Place in the top of a double boiler or in a large stainless-steel bowl over a saucepan filled halfway with water.
Before turning stove on, whisk the egg mixture until it becomes light and frothy.
Turn heat on to medium and continue to whisk until the eggs are thickened. This should take just a few minutes. Do not let eggs get hot – just warm.
Remove the bowl or the top of the double boiler from the saucepan and whisk to slightly cool the mixture.
Whisking constantly, very slowly add butter, then whisk in lemon juice, onions, salt and pepper.
The sauce should be creamy but not really thick. If it is thick just add a few drops of water.
Serve immediately while still warm.

Serves 2 – 4

Easy Croissant Recipe

Ingredients:

1 cup warm milk
1 teaspoon sugar
1 tablespoon yeast
1 cup flour
3/4 cup milk at room temperature
1 1/2 teaspoon salt
1/4 cup sugar
1 beaten egg
1/2 cups melted and cooled butter
4 cups flour
1 cup cold butter
1 egg beaten with cold water for wash

Directions:

Stir milk and sugar together.
Add yeast, stir well and let it sit for 10 minutes.
Add flour then beat ingredients together.
Add milk, sugar and egg. Beat until smooth.
Add butter; beat and set aside.
In a large mixing bowl, place the 4 cups of flour and the chilled butter. Cut butter into flour until pieces are the size of beans (not small crumbles like when you are making biscuits).
Pour the liquid batter into the flour mixture; stir until moistened.
Cover the bowl and refrigerate for at least 4 hours.
Form dough into a ball and on a floured board divide the dought into 4 parts.
Roll each part into a ball, Flatten into a 12′ – 16′ circle.
Cut each circle into 6 or 8 pie-shaped wedges.
Take the wide edge of each wedge and roll towards the point. Shape into a crescent (moon shape) and brush each croissant with egg mixture.
Place on ungreased baking sheet.
Let rise at room temperature until doubled. About 2 hours.
Bake in a 400 F oven. For the last 15 minutes or until golden bake at 375 degrees.

Eggless Cornbread

So you’re craving cornbread but you don’t have any eggs? Here is a great recipe for you! Substitute the milk for soymilk and it becomes a delicious vegan recipe.

Ingredients:

1 1/2 cups milk
1 1/2 tablespoons vinegar
1 cup cornmeal
1 cup flour
2 tablespoons sugar
3/4 teaspoons salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons oil

Directions:

Preheat the oven to 425°F.
Combine the milk and vinegar and let stand.
Mix dry ingredients in a large bowl.
Add the milk mixture and the oil into dry ingredients and stir until just blended.
Pour the batter into a lightly greased 9-inch square baking dish, and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

Breadsticks

Ingredients:

2.5 teaspoons dry yeast
1.5 cups warm water
1 tablespoon malted milk powder
1 tablespoon honey
1 teaspoon salt
4 – 4.5 cups flour
Melted butter for brushing

Directions:

Dissolve yeast in water, stir in honey, salt and malted milk powder.
Add flour until forms a ball.
Knead lightly on floured board.
Divide into pieces and roll to 10 inch rope.
Brush rope with melted butter.
Season your breadsticks some suggestions include: parmesan cheese, sesame seeds, poppy seeds, oregano, basil.
Bake at 400 degrees for 12-15 minutes.

Yeast Rolls

Ingredients:

5 cups of flour
1/2 cup shortening
2 tablespoons dry yeast or 2 packages
2 teaspoons salt
1 cup milk
3 eggs
1/2 cup sugar

Directions:

Combine 2 cups of flour and yeast.
In a saucepan heat milk, shortening, sugar and salt until warm, stir constantly until shortening melts.
Add to flour and yeast mixture.
Beat in eggs on low for 30 seconds then beat on high for 3 minutes.
By hand stir in enough flour to make a moderately stiff dough.
Turn onto a floured surface and kneed until smooth and elastic.
Form a ball and place in a greased bowl turning once to grease the surface.
Cover and let rise until doubled, about 1-1.5 hours.
Punch and place on a floured surface, cover and let rise for 10 minutes.
Shape into rolls and place them in a greased pan to rise 35-40 minutes.
Bake at 400 degrees for 10-12 minutes.

French Bread

Ingredients:

2 1/2 cups warm water
2 tablespoon sugar
2 tablespoons yeast
1 tablespoon salt
2 tablespoons oil
6 cups flour

Directions:

In a large mixing bowl dissolve yeast and sugar in warm water. Allow to stand until yeast begins to foam.
Stir in salt, oil and 3 cups flour. Beat for 2 -3 minutes.
Stir in remaining flour until all dry ingredients are completely mixed in. Allow dough to rest for 10 minutes.
Stir down five times. Then turn dough onto floured board and knead only enough to coat dough with flour so it can be handled.
Divide into two parts. Roll each part of dough into a rectangle (9×12 inch), and roll up like a jelly roll, rolling from long side.
Pinch edge of loaf to seal dough.
Arrange, seam side down, lenghtwise on a large greased cookie sheet, sprinkled with cornmeal, allowing room for both loaves.
Cover and let rise at room temperature for 30 minutes.
With sharp knife, cut three gashes at an angle on top of each loaf.
Brush surface with slightly beaten whole egg. If desired, sprinkle with sesame seeds.
Bake immediately at 400 degrees for 20-25 minutes or until golden.
Remove from oven and cool.

Melissa’s Homemade Bread

Ingredients:

5 cups of white flour
2 cups of whole wheat flour
3 teaspoons salt
3 teaspoons sugar
1/8 cup dry yeast
1/4 cup oil
3 cups hot water
1/2 cup warm water
some butter or margarine

Directions:

Combine flour and salt in a large bowl, set aside.
In a small bowl combine yeast, sugar and the 1/2 cup of warm water. Stir and let rise for a minute then add the oil.
Add the 3 cups of hot water to the flour. Stir just a little.
Create a well in the middle and add the yeast mixture to the well.
On a lightly floured surface, knead dough until you have a smooth ball.
Coat dough with butter or margarine and let rest for 20 minutes.
Knead again for at least 5 minutes and let rise again until the dough has doubled in size.
Place dough into loaf pans and let rice 3/4 of an inch over the top of loaf pans or shape into rolls.
Bake at 350 degrees F for 30-35 minutes or until golden brown.
