Ingredients:

• 3/4 cup milk
• 2 tablespoon white vinegar
• 1 cup whole wheat flour
• 2 tablespoons sugar
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1 egg
• 2 tablespoons butter
• Cooking spray

Directions:

1. In a medium bowl combine milk and vinegar.  Let sit for 5 minutes to “sour”.
2. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
3. Whisk egg and butter into “soured” milk.
4. Pour the flour mixture into the milk mixture and whisk (or use a hand held blender) until lumps are gone.
5. Heat a large skillet over medium heat, and coat with cooking spray.
6. Pour 1/4 cupfuls of batter onto the skillet, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side.

Ingredients:

• 2 cups flour
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1/4 cup cream cheese
• 1/4 cup butter
• 1/2 cup milk

Directions:

1. Sift flour and baking soda together in a medium mixing bowl
2. Cut butter and cream cheese into flour mixture until coarse
3. Stir in milk until just blended
4. Knead lightly on a floured surface
5. Roll out 1/2 inch thick. Cut with biscuit cutter or rim of a glass.
6. Place biscuits on an un-greased baking sheet.
7. Bake for 10-12 minutes in a 450 degree F oven.

Makes 20 biscuits.

• 1/2 cup sour cream
• 1/2 cup cream of mushroom soup
• 1/4 teaspoon salt
• 2 cups cooked chicken, chopped
• 1 cup cooked broccoli, chopped
• 1/2 cup red bell pepper, chopped
• 1/2 cup grated cheddar cheese
• 2 packages of refrigerated crescent rolls
• 1 egg white, lightly beaten

Directions:

1. Mix sour cream, cream of mushroom and salt in a large mixing bowl.
2. Add chicken, broccoli, bell pepper and cheese to the mixing bowl.
3. Pull the crescent rolls apart to triangles and place on a cookie sheet.
4. Scoop the chicken mixture onto the triangles.
5. With the other package of crescent rolls, place a triangle on top of the mixture and press the sides together so the mixture is sealed inside.
6. Bake in a 375 degree oven for 25 minutes or until golden brown.

Serves: 10

Ingredients:

• 2 1/4 cups flour
• 1 tablespoon yeast
• 2 tablespoons sugar
• 1/2 teaspoon salt
• 1/2 cup milk
• 1/4 cup water
• 2 tablespoons butter

Directions:

1. Combine 3/4 cup flour, yeast, sugar and salt in a large mixing bowl.
2. In a saucepan heat milk, water and butter until very warm, about 130 F.
3. Add milk mixture to flour mixture and beat for 2 minutes at medium speed with an electric mixer. Scrape the sides of the bowl to ensure mixture is evenly mixed.
4. Stir in the remaining flour until a soft ball of dough is formed.
5. Knead the dough on a lightly floured surface until the dough is smooth and elastic, about 10 minutes.
6. Cover the dough and let rest for 10 minutes.
7. Divide dough into 12 equal pieces and form into balls.
8. Place on a greased pan. Cover and let rise in a warm draft free place until dough is doubled in size. About 30 minutes. (A good place to allow dough to rise in a drafty home is in the oven with temperature preheated to ‘warm’ then turned off before you place the dough inside)
9. Bake in 375 degree F oven for 20 minutes or until bread is golden brown.

• 2 cups warm water
• 1 tablespoon salt
• 1 tablespoon or 1 pkg dry yeast
• 5 tablespoons butter
• 1/2 cup sugar
• 1 – 1/4 cups oatmeal
• 1-3 cups white flour
• 3 cups Whole wheat flour

One of my favourite breads to bake!

• Mix warm water, salt, yeast, butter, sugar, 1 cup oat meal, 1 cup white flour and 3 cups whole wheat flour well.
• On floured surface, knead for 10 – 15 minutes, add extra flour as needed.
• Place in two greased loaf pans (or cookie sheet for rolls).
• Cover and let rise until double (about 30 min). Sprinkle oats on top of loaf if desired.
• Bake at 350 degrees for 30 min (18-25 min for rolls).

• 1/2 cup shredded Cheddar cheese

• 1 teaspoon basil
• 1 teaspoon garlic powder
• 1 egg, beaten
• l 1/2 teaspoons coarse salt

Directions:

1. Combine first flour, yeast, salt and sugar in a medium bowl.
2. Cut in margarine with a pastry blender or two knives until mixture resembles coarse meal (like biscuits).
3. Add cheese, warm milk, basil and garlic powder stirring until dry ingredients are just moistened. Cover and allow to sit for about 10 minutes.
4. Turn dough out onto a lightly floured surface and knead about 12 times.
5. Divide dough in half and with a rolling pin roll each half into a rectangle. Cut dough lengthwise into eight 1-inch strips. Twist each into a pretzel shape.
6. brush with beaten egg and sprinkle with coarse salt.
7. Place on lightly greased baking sheets.
8. Bake at 400° for 15 minutes or until golden brown. Cool and serve warm.

Makes about 16 servings.

• 2 English muffins
• 4 thick slices ham about the size of the English Muffin.
• 4 poached eggs
• 1/2 Cup Hollandaise Sauce

Directions:

1. Split, toast and butter English muffins.
2. Cook meat and place a slice on top of muffin half.
3. Place one poached egg on each muffin half.
4. Pour 1/8 cup of Hollandaise sauce over each egg.




Easy Hollandaise Sauce ingredients:

• 3 large egg yolks
• 1 1/2 tablespoons cold water
• 1/2 cup warm butter
• 2 teaspoons lemon juice
• 3 tablespoons minced onion
• Salt and pepper to taste

Directions:

1. Place in the top of a double boiler or in a large stainless-steel bowl over a saucepan filled halfway with water.
2. Before turning stove on, whisk the egg mixture until it becomes light and frothy.
3. Turn heat on to medium and continue to whisk until the eggs are thickened. This should take just a few minutes. Do not let eggs get hot – just warm.
4. Remove the bowl or the top of the double boiler from the saucepan and whisk to slightly cool the mixture.
5. Whisking constantly, very slowly add butter, then whisk in lemon juice, onions, salt and pepper.
6. The sauce should be creamy but not really thick. If it is thick just add a few drops of water.
7. Serve immediately while still warm.

Serves 2 – 4

• 4 cups flour

• 1 egg beaten with cold water for wash

Directions:

1. Stir milk and sugar together.
2. Add yeast, stir well and let it sit for 10 minutes.
3. Add flour then beat ingredients together.
4. Add milk, sugar and egg. Beat until smooth.
5. Add butter; beat and set aside.
6. In a large mixing bowl, place the 4 cups of flour and the chilled butter. Cut butter into flour until pieces are the size of beans (not small crumbles like when you are making biscuits).
7. Pour the liquid batter into the flour mixture; stir until moistened.
8. Cover the bowl and refrigerate for at least 4 hours.
9. Form dough into a ball and on a floured board divide the dought into 4 parts.
10. Roll each part into a  ball, Flatten into a 12′ – 16′ circle.
11.  Cut each circle into 6 or 8 pie-shaped wedges.
12. Take the wide edge of each wedge and roll towards the point. Shape into a crescent (moon shape) and brush each croissant with egg mixture.
13. Place on ungreased baking sheet.
14. Let rise at room temperature until doubled. About 2 hours.
15. Bake in a 400 F oven. For the last 15 minutes or until golden bake at 375 degrees.

• 2 tablespoons oil

Directions:

1. Preheat the oven to 425°F.
2. Combine the milk and vinegar and let stand.
3. Mix dry ingredients in a large bowl.
4. Add the milk mixture and the oil into dry ingredients and stir until just blended.
5. Pour the batter into a lightly greased 9-inch square baking dish, and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.
