  • 5 cups of white flour
  • 2 cups of whole wheat flour
  • 3 teaspoons salt
  • 3 teaspoons sugar
  • 1/8 cup dry yeast
  • 1/4 cup oil
  • 3 cups hot water
  • 1/2 cup warm water
  • some butter or margarine

Directions:

  1. Combine flour and salt in a large bowl, set aside.
  2. In a small bowl combine yeast, sugar and the 1/2 cup of warm water. Stir and let rise for a minute then add the oil.
  3. Add the 3 cups of hot water to the flour. Stir just a little.
  4. Create a well in the middle and add the yeast mixture to the well.
  5. On a lightly floured surface, knead dough until you have a smooth ball.
  6. Coat dough with butter or margarine and let rest for 20 minutes.
  7. Knead again for at least 5 minutes and let rise again until the dough has doubled in size.
  8. Place dough into loaf pans and let rice 3/4 of an inch over the top of loaf pans or shape into rolls.
  9. Bake at 350 degrees F for 30-35 minutes or until golden brown.

Scones With Fruit

Ingredients:

  • 2 cups flour, sifted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar, plus 1-2 tablespoons
  • 3/4 cup of your choice of dried fruit
  • 1 1/4 cup heavy cream
  • 1 1/2 tablespoons un-salted butter, melted

Directions:

  1. Sift together sifted flour, baking powder, salt and 1/4 cup sugar into a bowl.
  2. Toss together with a fork ot mix thoroughly.
  3. Mix in your fruit.
  4. Pour in the cream and mix with a fork until the mixture holds together.
  5. The dough will be fairly sticky.
  6. Transfer the dough to a lightly floured work surface and sprinkle lightly with flour.
  7. Knead dough 10 times.
  8. Pat into a 9 inch pan.
  9. Brush with melted butter and sprinkle with 2 tablespoons sugar.
  10. Cut dough into 12 pie shaped wedges and transfer each to baking sheet.
  11. Bake 12 minutes at 425 degrees F.

Banana Bread 2

Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp ground cinnamon
  • 1/8 tsp salt
  • 1 egg
  • 1 cup mashed bananas (3 medium ripe)
  • 3/4 cup sugar
  • 1/4 cup cooking oil
  • 1 tsp finely shredded lemon peel (optional)
  • 1/2 cup chopped walnuts or pecans (optional)

Directions:

  1. Grease 8 x 4 x 2 inch loaf pan.
  2. In a medium sized mixing bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Make a well in the center of dry mixture, set aside.
  3. In another bowl, combine the egg, bananas, sugar, cooking oil and lemon peel.
  4. Add egg mixture all once to the well in dry mixture. Stir till just moistened. Batter should be lumpy. Fold in nuts.
  5. Spoon batter into the pan.
  6. Bake at 350 degrees for 50-55 minutes.
  7. Remove and cool on wire rack for 10 minutes.
