Just Plain Chocolate Fudge

Ingredients:

  • 2 Cups semi-sweet chocolate chips
  • 1 14 oz can of sweetened condensed milk
  • 1 tablespoon vanilla
  • dash of salt

Directions:

  1. Line an 8X8 inch pan with wax paper.
  2. Combine chocolate chips and milk into a pot and melt over low-medium heat.
  3. Remove from heat and stir in vanilla and salt.
  4. Chill in refridgerator for at least 3 hours.

The Original Nanaimo Bar Recipe

Over 35 years ago Joyce Hardcastle of Nanaimo, British Columbia  Canada won a “chocolate squares” recipe competition for her now famous Nanaimo Bars.

My husband fell in love with these squares the first time is visited British Columbia to spend Christmas with my family and we went to Tim Hortons where he bought a Nanaimo Bar. That Christmastime we also visited Nanaimo, BC to visit with some of my family members there. It really is a beautiful city!

Here is the recipe:

  • ½ cup unsalted butter (European style cultured)
  • ¼ cup sugar
  • 5 tbsp. cocoa
    1 egg beaten
  • 1 ¼ cups graham wafer crumbs
  • ½ c. finely chopped almonds
  • 1 cup coconut

Directions:

  1. Melt first 3 ingredients in top of double boiler.
  2. Add egg and stir to cook and thicken. Remove from heat.
  3. Stir in crumbs, coconut, and nuts.
  4. Press firmly into an ungreased 8″ x 8″ pan.
  • ½ cup unsalted butter
  • 2 Tbsp. and 2 Tsp. cream
  • 2 Tbsp. vanilla custard powder (You may replace with 2 Tbsp vanilla instant pudding powder)
  • 2 cups icing sugar

Directions:

  1. Cream butter, cream, custard powder, and icing sugar together well - until light.
  2. Spread over bottom layer.
  • 4 squares semi-sweet chocolate (1 oz. each)
  • 2 Tbsp. unsalted butter

Directions:

  1. Melt chocolate and butter overlow heat. Cool.
  2. Once cool, but still liquid, pour over second layer
  3. Chill in the refrigerator for at least 2 hours or until top layer is hard.

Super Easy Homemade Graham Cracker Crust

Making your own graham cracker crust is so easy and so much cheaper than buying a ready-made pie crust.

Ingredients:

  • 12 graham crackers
  • 3 tablespoons butter
  • Optional: 2 tablespoons sugar
  • Optional: dash of cinnamon, nutmeg or all-spice

Directions:

  1. Place the graham crackers inside a 1 gallon plastic bag then over the plastic bag roll the crackers with a rolling pin until the crackers are turned into crumbs.
  2. Melt the butter.
  3. Add the cracker crumbs and optional ingredients to butter, mix together.
  4. Press mixture onto pie plate or pan.
  5. If you would like to prebake the crust then bake at 350 degrees F for 8-10 minutes.
