Melon and Blueberry Salad with Frozen Raspberry Puree

Ingredients:

  • 1 ripe cantaloupe or honeydew melon
  • 2 peaches or nectarine, peeled and sliced
  • 2 tbs lemon juice
  • 2 cups blueberries
  • 1 1/2 cups frozen raspberries
  • 1 1/2 tbs honey

Directions:

  1. Cut the melon into 6 slices and place on individual plates or in bowls.
  2. Toss peaches or nectarine with 1 tsp of the lemon juice. Then toss with blueberries.
  3. Fill centers of melon wedges with peaches and blueberries.
  4. Place the frozen raspberries and honey in a blender or food processor and puree.
  5. Spoon over peaches and blueberries.

Easy Whole Wheat Raisin Bread

Ingredients:

  • 2 cups whole wheat flour
  • 1 cup unbleached all-purpose flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup raisins
  • 2 cups nonfat buttermilk
  • 1/2 cup molasses


Directions:

  1. Combine whole wheat flour, white flour, baking soda, salt, and raisins.
  2. Stir in the buttermilk and molasses into the dry ingredients. Mix well.
  3. Pour into a nonstick bread pan or line baking pan with a liner. Let stand for 1 hour.
  4. Preheat oven to 325 degrees.
  5. Bake bread for 1 hour or until wooden pick inserted in the center of the bread comes out dry.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool. Cut into 10 slices.

Applesauce Quick Bread

Ingredients:

  • 2 1/2 cups unbleached all purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup brown sugar, firmly packed
  • 1 tbs ground cinnamon
  • 1 cup applesauce
  • 2 egg whites
  • 1 cup skim milk


Directions:

  1. Combine flour, baking powder, salt, sugar and cinnamon.
  2. Stir in the applesauce, egg whites and milk.
  3. Pour into a nonstick loaf pan or one that is lined or greased.
  4. Preheat oven to 325 degrees F.
  5. Bake bread for 50 minutes or until a wooden pick inserted in center of the bread comes out dry.
  6. Cool in pan for 10 minutes, then transfer to a wire rack to cool. Cut into 10 slices.

Apple Shake

  • 1 cup apple juice
  • 1 large apple, cored, peeled and sliced
  • 1 banana, peeled and sliced
  • 1/4 tsp ground cinnamon


Directions:

  1. Place apple juice, apple, banana and cinnamon in blender or food processor and process until smooth.
