Pineapple Carrots

Ingredients:

  • 8 medium carrots, scrubbed and cut into julienne strips
  • 1 1/2 cups pineapple juice
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp black pepper

Directions:

  1. Place carrot strips, pineapple juice, ground cinnamon and black pepper in a saucepan.
  2. Bring to a boil, reduce heat and simmer, covered for about 15 minutes.

Cranberry Applesauce

Ingredients:

  • 6 Apples, cored and cut into chunks
  • 1 cup raw cranberries
  • 1/2 cup apple cider
  • 1 cinnamon stick
  • 2 tbs brown sugar firmly packed
  • pinch of ground nutmeg

Directions:

  1. Combine apples, cranberries, apple cider, and cinnamon in a large heavy saucepan. Bring to a boil, reduce heat, cover and simmer for 15 minutes. Stirring Several times.
  2. Remove the cinnamon stick. Transfer the apple-cranberry mixture to a blender or food processor and puree.
  3. Stir sugar and nutmeg into puree.

Red Potato - Spinach Salad

Ingredients:

  • 1 1/2 pound new red potatoes. Scrubbed and halved
  • 2 cups fresh spinach leaves, chopped
  • 1/2 cup chopped scallions
  • 3 tbs lemon juice
  • 1/2 cup plain nonfat yogurt
  • 1/4 tsp black pepper

Directions:

  1. Drop potatoes in boiling water and cook over medium heat for 20 minutes or until tender. Drain and allow potatoes to cool.
  2. Toss cooled potatoes with spinach leaves and scallions.
  3. combine lemon juice, yogurt and black pepper.
  4. Toss dressing with potatoes, spinach and scallions
