Strawberry Spinach Salad

Ingredients:

  • 2 tbs balsamic vinegar
  • 2 tbs rice vinegar
  • 1 1/2 tbs honey
  • 2 tsp Dijon Mustard
  • 1/2 tsp black pepper
  • 8 cups torn fresh spinach leaves
  • 1 cup sliced strawberries
  • 1/2 cup chopped red onions

Directions:

  1. Combine balsamic vinegar, rice vinegar, honey, mustard, and black pepper.
  2. Toss spinach, strawberries and red onions with dressing.

Melon and Blueberry Salad with Frozen Raspberry Puree

Ingredients:

  • 1 ripe cantaloupe or honeydew melon
  • 2 peaches or nectarine, peeled and sliced
  • 2 tbs lemon juice
  • 2 cups blueberries
  • 1 1/2 cups frozen raspberries
  • 1 1/2 tbs honey

Directions:

  1. Cut the melon into 6 slices and place on individual plates or in bowls.
  2. Toss peaches or nectarine with 1 tsp of the lemon juice. Then toss with blueberries.
  3. Fill centers of melon wedges with peaches and blueberries.
  4. Place the frozen raspberries and honey in a blender or food processor and puree.
  5. Spoon over peaches and blueberries.

Lemon-Dill Potato Salad

Ingredients:

  • 3 medium potatoes
  • 1/2 cup chopped scallions
  • 1/2 cup chopped celery
  • 1 cup plain nonfat yogurt
  • 1/2 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dill leaves
  • 2 tbs lemon juice
  • 1 cup diced cucumber

Directions:

  1. Combine potatoes, scallions, radishes and celery in a large bowl.
  2. Combine yogurt, mustard, garlic, dill, and lemon juice. Chill for 1 hour.
  3. Garnish with diced cucumber and serve.

Sweet And Sour Dressing

  • 1 cup water
  • 1 cup confectioners sugar
  • 2 tsp Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1 tsp ground paprika
  • 1 tsp celery seed


Directions:

  1. Combine water, sugar, mustard, and vinegar in a blender or food processor and process until well combined.
  2. Whisk in paprika and celery seed.
