Chopped Veggie Salad With Feta

Ingredients:

  • 1/2 can of artichoke hearts, drained and chopped  
  • 4 0z button mushrooms
  • 1 tomato seeded and choped
  • 1/4 cup green onion, finely chopped
  • 1/4 cup snipped fresh parsley  
  • 1/2 tbs  dried basil
  • 3/4 tsp dried oregano  
  • 1/2 oz feta cheese, crumbled

Directions:

  1. In a medium bowl, toss together all the ingredients except the feta.
  2. Add the feta and toss gently.

Candied Yams

Ingredients:

  • 1 teaspoon butter or margarine
  • 2 tablespoons water
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 pound of yams, cooked, drained and sliced

Directions:

  1. In a skillet on medium heat, melt butter.
  2. Add water, brown sugar, and spices. Heat 2 minutes or until bubbly.
  3. Add yams to pan and carefully spoon sauce over yams. Turn heat to low, cover, and heat for 5 minutes.

Serves: 2

Curried Veggies With Rice

Ingredients:

  • 1 cup rice.
  • 2 medium potatoes, chopped.
  • 1 medium onion, chopped.
  • more chopped vegetables if desired such as carrots, peas or green beans.
  • 2 tbs oil
  • 1 tbs curry powder (1/2 tbs for a mild curry flavor).
  • 5 tbs milk or plain yogurt.
  • 2 tbs butter or margarine.
  • 1/2 tbs salt

Directions:

  1. Prepare rice.
  2. Stirfry vegetables on high heat in oil.
  3. When Potatoes are soft add curry powder, milk or yoghurt, butter or margarine and salt.
  4. Remove from heat and serve vegetable mixture over rice mixture.
