Scones With Fruit

Ingredients:

  • 2 cups flour, sifted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar, plus 1-2 tablespoons
  • 3/4 cup of your choice of dried fruit
  • 1 1/4 cup heavy cream
  • 1 1/2 tablespoons un-salted butter, melted

Directions:

  1. Sift together sifted flour, baking powder, salt and 1/4 cup sugar into a bowl.
  2. Toss together with a fork ot mix thoroughly.
  3. Mix in your fruit.
  4. Pour in the cream and mix with a fork until the mixture holds together.
  5. The dough will be fairly sticky.
  6. Transfer the dough to a lightly floured work surface and sprinkle lightly with flour.
  7. Knead dough 10 times.
  8. Pat into a 9 inch pan.
  9. Brush with melted butter and sprinkle with 2 tablespoons sugar.
  10. Cut dough into 12 pie shaped wedges and transfer each to baking sheet.
  11. Bake 12 minutes at 425 degrees F.

Chopped Veggie Salad With Feta

Ingredients:

  • 1/2 can of artichoke hearts, drained and chopped  
  • 4 0z button mushrooms
  • 1 tomato seeded and choped
  • 1/4 cup green onion, finely chopped
  • 1/4 cup snipped fresh parsley  
  • 1/2 tbs  dried basil
  • 3/4 tsp dried oregano  
  • 1/2 oz feta cheese, crumbled

Directions:

  1. In a medium bowl, toss together all the ingredients except the feta.
  2. Add the feta and toss gently.

Sautéed Onion & Tomato Sandwich

Ingredients:

  • 2 medium onions, sliced
  • 1 teaspoon olive oil
  • 8 slices whole grain or rye bread (toasted if desired)
  • honey mustard
  • 3 small red and/or yellow tomatoes, thinly sliced
  • 4 lettuce leaves, shredded
  • small fresh basil leaves
  • 4 ounces spreadable Brie cheese or tub-style cream cheese

Directions:

  1. In a large skillet cook onions in hot oil over medium-high heat for 5 to 7 minutes or until onions are tender and just starting to brown, stirring frequently. Remove from heat; cool slightly
  2. To assemble, lightly spread one side of 4 bread slices with honey mustard. Top with the onion slices, tomato slices, shredded lettuce, and basil. Spread one side of the remaining 4 bread slices with Brie cheese. Place the bread slices, cheese sides down, on top of sandwiches.
