Eggless Cornbread
So you’re craving cornbread but you don’t have any eggs? Here is a great recipe for you! Substitute the milk for soymilk and it becomes a delicious vegan recipe.
Ingredients:
- 1 1/2 cups milk
- 1 1/2 tablespoons vinegar
- 1 cup cornmeal
- 1 cup flour
- 2 tablespoons sugar
- 3/4 teaspoons salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons oil
Directions:
- Preheat the oven to 425°F.
- Combine the milk and vinegar and let stand.
- Mix dry ingredients in a large bowl.
- Add the milk mixture and the oil into dry ingredients and stir until just blended.
- Pour the batter into a lightly greased 9-inch square baking dish, and bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

What an interesting recipe. When I run out of eggs I’m going to try it out. I really love corn bread!

I was out of eggs and this was perfect to fill my cornbread craving! I used an iron skillet and it was hot and crisp. I used self-rising flour so I omitted the baking powder. I also left out the sugar b/c in the south sweet cornbread is a disgrace. I’m going to keep using this recipe! It was the best cornbread I’ve ever made!
