Lemon-Dill Potato Salad
Ingredients:
- 3 medium potatoes
- 1/2 cup chopped scallions
- 1/2 cup chopped celery
- 1 cup plain nonfat yogurt
- 1/2 tsp Dijon mustard
- 1 clove garlic, minced
- 1 tsp dill leaves
- 2 tbs lemon juice
- 1 cup diced cucumber
Directions:
- Combine potatoes, scallions, radishes and celery in a large bowl.
- Combine yogurt, mustard, garlic, dill, and lemon juice. Chill for 1 hour.
- Garnish with diced cucumber and serve.
