Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup yellow corn meal
  • 1/2 cup unbleached all purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup molasses
  • 2/3 cup nonfat buttermilk
  • 2 egg whites
  • 3/4 cup raisins


Directions:

  1. Combine whole wheat flour, cornmeal, all-purpose flour, baking powder, baking soda, molasses, buttermilk, egg whites and raisins in a mixing bowl.
  2. Line the bottom of a 2 cup glass measure with a waxed paper circle. (Boston Brown Bread should be log shaped).
  3. Pour in half the batter. Cover with vented plastic wrap. Microwave on medium for 7 minutes. Test with a toothpick, Bread is done when toothpick comes out clean. Remove and let stand 10 minutes.
  4. Run a knife around edge of measure to release the bread. Turn out onto a serving plate.
  5. Wipe out glass measure and repeat steps 2 and 3 with the remaining half of the batter.
  6. To cut with out crumbling, use cotton kitchen string and cut with a sawing motion. Slice each cylindrical loaf into 5 slices.
