Ingredients:

  • 7 Granny Smith apples, peeled, cored and quartered
  • 6 ounces frozen apple juice concentrate, defrosted
  • 1/4 cup light brown sugar
  • 1 tsp ground cinnamon
  • 1 1/2 cups Vanilla Granola
  • 1 tbs unsalted butter


Directions:

  1. Grease Saucepan
  2. Add apples, apple juice, sugar, and cinnamon. Cook on high until the apples are tender and the juice is reduced and carmelized. About 15 minutes.
  3. Lightly grease 6×8 inch baking dish with vegetable oil. Place the apples in the bottom of the dish. Reserve the juice.
  4. Preheat oven to 350 degrees F
  5. Cover the apples with granola. Pour over the reserved juice and dot with butter.
  6. Bake for 20-30 minutes or until golden.
  7. Serve warm and top with ice cream or frozen yogurt if desired.
