Mom’s Apple Crisp

Ingredients:
- 7 Granny Smith apples, peeled, cored and quartered
- 6 ounces frozen apple juice concentrate, defrosted
- 1/4 cup light brown sugar
- 1 tsp ground cinnamon
- 1 1/2 cups Vanilla Granola
- 1 tbs unsalted butter
Directions:
- Grease Saucepan
- Add apples, apple juice, sugar, and cinnamon. Cook on high until the apples are tender and the juice is reduced and carmelized. About 15 minutes.
- Lightly grease 6×8 inch baking dish with vegetable oil. Place the apples in the bottom of the dish. Reserve the juice.
- Preheat oven to 350 degrees F
- Cover the apples with granola. Pour over the reserved juice and dot with butter.
- Bake for 20-30 minutes or until golden.
- Serve warm and top with ice cream or frozen yogurt if desired.
