Pineapple Carrots

Ingredients:
- 8 medium carrots, scrubbed and cut into julienne strips
- 1 1/2 cups pineapple juice
- 1 1/2 tsp ground cinnamon
- 1/4 tsp black pepper
Directions:
- Place carrot strips, pineapple juice, ground cinnamon and black pepper in a saucepan.
- Bring to a boil, reduce heat and simmer, covered for about 15 minutes.
