Scones With Fruit
Ingredients:
- 2 cups flour, sifted
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup sugar, plus 1-2 tablespoons
- 3/4 cup of your choice of dried fruit
- 1 1/4 cup heavy cream
- 1 1/2 tablespoons un-salted butter, melted
Directions:
- Sift together sifted flour, baking powder, salt and 1/4 cup sugar into a bowl.
- Toss together with a fork ot mix thoroughly.
- Mix in your fruit.
- Pour in the cream and mix with a fork until the mixture holds together.
- The dough will be fairly sticky.
- Transfer the dough to a lightly floured work surface and sprinkle lightly with flour.
- Knead dough 10 times.
- Pat into a 9 inch pan.
- Brush with melted butter and sprinkle with 2 tablespoons sugar.
- Cut dough into 12 pie shaped wedges and transfer each to baking sheet.
- Bake 12 minutes at 425 degrees F.
