This is one of my favourite salads. I leave the bacon out but left the bacon as part of the ingredients for those who like bacon.

Ingredients:

  • 1 pound spinach
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1/4 teaspoon paprika
  • 1/4 cup apple cider vinegar
  • 1/2 teaspoon salt
  • 6 slices bacon, cooked and crumbled
  • 1 can mandarin oranges
  • 1 cup slivered almonds
  • 1 tablespoons grated onion

Directions:

  1. Bring sugar and vinegar to a boil then simmer for 10 minutes.
  2. Blend paprika, salt, onion and vinegar mixture. Chill.
  3. Tear spinach.
  4. Toss spinach with oranges, almonds and bacon.
  5. Slowly add dressing in parts until all of the salad is coated.
