Split Pea Soup with Carrots
Ingredients:
- 4 cups water
- 3/4 cup dry green split peas
- 3/4 cup chopped carrots
- 1/4 cup chopped onion
- 1/4 tsp dried thyme leaves
- Pinch of cayenne pepper
- 1 tsp lemon juice
- 1 large fresh tomato chopped
Directions:
- Place water, peas, carrots, onion, thyme and cayenne pepper in a large pot. Bring to a boil.
- Reduce heat and simmer for 1 hour or until peas are tender.
- Transfer to a blender or food processor and puree
- Return to pot and warm through. Stir in lemon juice.
- Serve garnished with chopped tomatoes.
