Traditional Shortbread
A delicious recipe right from Scotland, my mom’s homeland!
Ingredients:
- 3/4 cup sifted flour.
- 1/4 cup castor (superfine) sugar.
- Dash of salt.
- 1/2 cup of room temperature unsalted butter (it needs to be real butter).
Directions:
- Preheat your oven to 350 degrees Ferinheit.
- Combine the flour, sugar and salt in a mixing bowl. Cut in the butter with a pastry cutter or two knives (like you are making biscuits) until crumbly.
- Turn the dough onto a lightly floured surface and knead until it’s smooth. Refrigerate the dough for a couple of hours or overnight.
- Divide the dough into 4-8 equal (depending on how big you want your cookie to be) portions. Mold into balls.
- Place each ball of dough on a wax paper lined baking sheet and flatten them to 1/4 inch thickness. Prick edges with a fork.
- Bake at 350 degrees F. for 20 to 30 minutes or until slightly browned.
- Cool and cut each round cookie into triangular pieces.
